Ingredients

  • 1 (15-ounce) can of Black Beans, rinsed and drained
  • 1 large ripe Avocado, mashed
  • ½ cup of Frozen or Canned Corn
  • ¼ cup of finely chopped Red Onion
  • ¼ cup of fresh Cilantro, chopped
  • 1 tablespoon of Lime Juice
  • ½ teaspoon of Cumin Powder
  • ¼ teaspoon of Chili Powder
  • Salt and Black Pepper, to taste
  • 4 large (10-inch) Flour Tortillas

Instructions

  1. In a medium bowl, mash the avocado with a fork and add lime juice.
  2. Add the rinsed black beans, corn, red onion, and cilantro to the bowl.
  3. Sprinkle the cumin, chili powder, salt, and pepper over the mixture.
  4. Gently fold the ingredients together, being careful not to mash the beans too much.
  5. (Optional) Warm the tortillas in a skillet or microwave.
  6. Lay a warm tortilla flat, spoon about a quarter of the filling in the center, and roll it up tightly.
  7. Repeat with the remaining tortillas and filling, and enjoy while warm!

Notes

Store leftovers in an airtight container; they will last up to 2 days. Keep the filling and tortillas separate for best results.
