- 1 (15-ounce) can of Black Beans, rinsed and drained
- 1 large ripe Avocado, mashed
- ½ cup of Frozen or Canned Corn
- ¼ cup of finely chopped Red Onion
- ¼ cup of fresh Cilantro, chopped
- 1 tablespoon of Lime Juice
- ½ teaspoon of Cumin Powder
- ¼ teaspoon of Chili Powder
- Salt and Black Pepper, to taste
- 4 large (10-inch) Flour Tortillas
Instructions
- In a medium bowl, mash the avocado with a fork and add lime juice.
- Add the rinsed black beans, corn, red onion, and cilantro to the bowl.
- Sprinkle the cumin, chili powder, salt, and pepper over the mixture.
- Gently fold the ingredients together, being careful not to mash the beans too much.
- (Optional) Warm the tortillas in a skillet or microwave.
- Lay a warm tortilla flat, spoon about a quarter of the filling in the center, and roll it up tightly.
- Repeat with the remaining tortillas and filling, and enjoy while warm!
Notes
Store leftovers in an airtight container; they will last up to 2 days. Keep the filling and tortillas separate for best results.
