Ingredients

- Base:
- 2 cups cooked jasmine or brown rice (or rice noodles)
- 2 cups shredded lettuce or cabbage
- Toppings:
- 1 cup shredded carrots
- 1 cup thinly sliced cucumbers
- 1 cup cooked shrimp or tofu (optional)
- 1/2 cup bean sprouts
- 1/4 cup fresh cilantro or mint leaves
- 2 tbsp crushed peanuts
- Dressing:
- 3 tbsp soy sauce
- 1 tbsp rice vinegar
- 1 tbsp lime juice
- 1 tsp sesame oil
- 1 tsp honey or sugar
- 1 garlic clove, minced
Instructions
- Prepare your base by cooking rice or noodles. Let cool slightly.
- Whisk together all dressing ingredients in a small bowl.
- In a large bowl or individual serving bowls, layer the rice or noodles, shredded lettuce, and other toppings.
- Drizzle with the dressing and sprinkle crushed peanuts on top. Serve immediately.
