Ingredients

  • Base:
    • 2 cups cooked jasmine or brown rice (or rice noodles)
    • 2 cups shredded lettuce or cabbage
  • Toppings:
    • 1 cup shredded carrots
    • 1 cup thinly sliced cucumbers
    • 1 cup cooked shrimp or tofu (optional)
    • 1/2 cup bean sprouts
    • 1/4 cup fresh cilantro or mint leaves
    • 2 tbsp crushed peanuts
  • Dressing:
    • 3 tbsp soy sauce
    • 1 tbsp rice vinegar
    • 1 tbsp lime juice
    • 1 tsp sesame oil
    • 1 tsp honey or sugar
    • 1 garlic clove, minced

Instructions

  • Prepare your base by cooking rice or noodles. Let cool slightly.
  • Whisk together all dressing ingredients in a small bowl.
  • In a large bowl or individual serving bowls, layer the rice or noodles, shredded lettuce, and other toppings.
  • Drizzle with the dressing and sprinkle crushed peanuts on top. Serve immediately.
