Ingredients
1 cup apple cider (reduced)
2 cups all-purpose flour
1½ tsp baking powder
½ tsp baking soda
2 tsp cinnamon
½ tsp nutmeg
¾ cup brown sugar
¼ cup granulated sugar
½ cup melted unsalted butter
¼ cup vegetable oil
2 large eggs
1 tsp vanilla extract
1 tsp apple cider vinegar (optional)
Instructions
1. Preheat the oven to 350°F. Grease a 9×5-inch loaf pan.
2. Simmer 2 cups of cider until reduced to 1 cup; let cool.
3. In a bowl, whisk flour, baking powder, soda, and spices.
4. In another bowl, whisk melted butter, oil, sugars, eggs, vanilla, and cooled cider.
5. Fold dry ingredients into wet mix until just combined.
6. Pour into loaf pan and bake 45–50 minutes or until a toothpick comes out clean.
7. Cool completely before glazing with cider icing or dusting with powdered sugar.
Notes
For extra apple flavor, add 1 tablespoon of apple butter or grated apple.
Store in an airtight container for 3–4 days at room temperature or up to a week refrigerated.
