Ingredients

3/4 cup white sugar

2 tsp baking powder

3/4 cup buttermilk

1/4 cup melted butter

2 large eggs

1 tsp vanilla extract

2 cups peeled, finely chopped apples

Oil for frying (canola or vegetable)

3 cups powdered sugar

1/2 cup milk

4 tsp vanilla extract

Instructions

1. In a large bowl, whisk together flour, sugar, baking powder, baking soda, salt, and cinnamon.

2. In another bowl, whisk buttermilk, melted butter, eggs, and vanilla until smooth.

3. Stir wet ingredients into dry ingredients until combined. Fold in chopped apples.

4. Preheat waffle maker and cook waffles until golden brown. Cool on a rack.

5. Cut waffles into halves or quarters to form donut-sized pieces.

6. Heat oil in a deep skillet or fryer to 350°F. Fry waffle pieces for about 1 minute per side until golden.

7. Drain on paper towels and transfer to a rack.

8. In a bowl, whisk powdered sugar, milk, and vanilla to make glaze.

9. Dip warm donuts into glaze until coated. Let set on rack for 15–20 minutes before serving.

Notes

For extra crunch, add chopped pecans or walnuts to the batter.

Swap cinnamon for pumpkin spice to create a seasonal variation.
