  • 1 teaspoon Salt
  • 1 teaspoon Pepper
  • 2 tablespoons Olive Oil (for sautéing)
  • 1 medium Onion (sauté until translucent)
  • 2 cloves Garlic (minced)
  • 1 tablespoon Ginger (grated)
  • 1 can Coconut Milk (full-fat preferred)
  • 3 tablespoons Lemon Juice (freshly squeezed)
  • 1 teaspoon Lemon Zest

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Season the cod fillets with salt and pepper.
  3. Heat olive oil in a skillet over medium heat. Sauté the onion until translucent.
  4. Add garlic and ginger, cooking for another minute until fragrant.
  5. Pour in the coconut milk and stir well. Add lemon juice and lemon zest, and let it simmer for 2-3 minutes.
  6. Place the seasoned cod fillets into a baking dish. Pour the coconut lemon sauce over the fillets.
  7. Bake in the preheated oven for about 15-20 minutes, or until the cod is cooked through and flakes easily with a fork.
