Ingredients

  • 6 large flour tortillas
  • 1 pound breakfast sausage
  • 8 large eggs
  • 1 cup shredded cheese (cheddar or a blend)
  • 2 cups prepared sausage gravy
  • 1 cup diced bell peppers
  • 1 small onion, diced
  • Salt and pepper to taste
  • Chopped green onions for garnish

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a skillet, cook the breakfast sausage over medium heat until browned.
  3. Add the diced onion and bell peppers, and cook until softened.
  4. In a bowl, whisk together the eggs, salt, and pepper and pour into the skillet, scrambling until cooked through.
  5. Take a tortilla and fill it with the egg mixture and some shredded cheese, then roll it up.
  6. Place the rolled tortillas seam-side down in a baking dish.
  7. Pour the sausage gravy over the top and sprinkle remaining cheese.
  8. Bake for 20-25 minutes, or until heated through and cheese is melted.
  9. Garnish with chopped green onions before serving.

Notes

Use pre-made sausage gravy to save time. Do not overfill the tortillas and warm them briefly to make rolling easier.
