- 6 large flour tortillas
- 1 pound breakfast sausage
- 8 large eggs
- 1 cup shredded cheese (cheddar or a blend)
- 2 cups prepared sausage gravy
- 1 cup diced bell peppers
- 1 small onion, diced
- Salt and pepper to taste
- Chopped green onions for garnish
Instructions
- Preheat the oven to 350°F (175°C).
- In a skillet, cook the breakfast sausage over medium heat until browned.
- Add the diced onion and bell peppers, and cook until softened.
- In a bowl, whisk together the eggs, salt, and pepper and pour into the skillet, scrambling until cooked through.
- Take a tortilla and fill it with the egg mixture and some shredded cheese, then roll it up.
- Place the rolled tortillas seam-side down in a baking dish.
- Pour the sausage gravy over the top and sprinkle remaining cheese.
- Bake for 20-25 minutes, or until heated through and cheese is melted.
- Garnish with chopped green onions before serving.
Notes
Use pre-made sausage gravy to save time. Do not overfill the tortillas and warm them briefly to make rolling easier.
