Ingredients
6 slices turkey bacon, chopped
1 tablespoon butter
1 large onion, diced
2 celery stalks, chopped
1 red bell pepper, diced
3 cloves garlic, minced
2 pounds Yukon gold potatoes, diced
4 cups chicken broth
1 teaspoon Cajun seasoning
½ teaspoon smoked paprika
1 cup heavy cream
1 cup shredded cheddar cheese
Salt and pepper to taste
Chopped green onions and parsley for garnish
Instructions
1. Cook chopped bacon in a large pot until crispy. Remove and set aside.
2. Melt butter in the same pot and sauté onion, celery, red bell pepper, and garlic until soft.
3. Add diced potatoes, chicken broth, Cajun seasoning, and smoked paprika. Simmer 20–25 minutes.
4. Use an immersion blender to blend part of the soup for a creamy texture.
5. Stir in heavy cream and cheddar cheese until melted.
6. Season with salt and pepper, then top with bacon, green onions, and parsley.
Notes
For extra heat, add more Cajun seasoning or hot sauce.
You can make this vegetarian by using vegetable broth and skipping the bacon.
Serve with crusty bread or cornbread for a hearty meal.
