- 1 pound ground beef
- 4 cups diced potatoes
- 1 onion, chopped
- 4 cups beef broth
- 1 cup heavy cream
- 2 cups shredded cheddar cheese
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large pot, cook the ground beef and onion over medium heat until the meat is browned. Drain excess fat.
- Add the diced potatoes and beef broth to the pot. Bring to a boil, then reduce heat and simmer until the potatoes are tender, about 15-20 minutes.
- Stir in the heavy cream and cheese. Continue cooking until the cheese is melted and the soup is heated through.
- Season with salt and pepper to taste.
- Serve hot, garnished with parsley and additional cheese if desired.
Notes
For extra flavor, consider adding garlic or your favorite herbs such as thyme or rosemary. For a thicker soup, mash some potatoes against the side of the pot.
