- 2 cups cooked chicken, shredded
- 1 avocado, mashed
- 1 cup shredded cheese (cheddar or Monterey Jack)
- 4 slices of bread (your choice)
- Salt and pepper to taste
- Butter or olive oil for grilling
Instructions
- In a bowl, mix the shredded chicken and mashed avocado. Season with salt and pepper.
- Spread the chicken-avocado mixture evenly on two slices of bread.
- Sprinkle shredded cheese on top of the mixture.
- Top with the remaining slices of bread.
- Heat a skillet over medium heat and add butter or olive oil.
- Grill the sandwiches for 3-4 minutes on each side, until golden brown and the cheese is melted.
- Serve warm.
Notes
For a crunchier texture, use artisan bread or sourdough. Add sliced tomatoes or lettuce for extra flavor. You can also use tortillas to make a wrap version.
