Ingredients

  • 2 cups cooked chicken, shredded
  • 1 avocado, mashed
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • 4 slices of bread (your choice)

Instructions

  1. In a bowl, mix the shredded chicken and mashed avocado. Season with salt and pepper.
  2. Spread the chicken-avocado mixture evenly on two slices of bread.
  3. Sprinkle shredded cheese on top of the mixture.
  4. Top with the remaining slices of bread.
  5. Heat a skillet over medium heat and add butter or olive oil.
  6. Grill the sandwiches for 3-4 minutes on each side, until golden brown and the cheese is melted.
  7. Serve warm.
