1 cup unsalted butter, melted
1 ½ cups light brown sugar
¼ cup granulated sugar
2 large eggs
2 tsp vanilla extract
2 cups all-purpose flour
2 tsp ground cinnamon
½ tsp baking powder
¼ tsp salt
1 tbsp cinnamon sugar (for topping)
Instructions
1. Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper.
2. Whisk melted butter, brown sugar, and granulated sugar until smooth.
3. Add eggs and vanilla extract; stir until glossy.
4. In a separate bowl, whisk flour, cinnamon, baking powder, and salt.
5. Combine wet and dry ingredients until just mixed. Do not overmix.
6. Pour batter into prepared pan and smooth the top.
7. Sprinkle cinnamon sugar evenly over the batter.
8. Bake for 25–30 minutes or until the edges are golden brown and the center is set.
9. Cool completely before cutting into squares.
Notes
Store leftovers in an airtight container at room temperature for up to 4 days.
Freeze individually wrapped blondies for up to 3 months.
