- 8 oz pasta
- 1 cup cooked chicken, shredded
- 1 cup mixed vegetables (peas, carrots, corn)
- 1 can cream of chicken soup
- 1 cup chicken broth
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper, to taste
- 1 cup shredded cheese (optional)
- Fresh parsley, for garnish
Instructions
- Cook the pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet, combine the cooked chicken, mixed vegetables, cream of chicken soup, chicken broth, garlic powder, onion powder, salt, and pepper.
- Bring the mixture to a simmer over medium heat, stirring occasionally, for about 5-7 minutes.
- Add the cooked pasta to the skillet, stirring until well combined and heated through.
- If desired, sprinkle shredded cheese on top and cover until melted.
- Serve warm, garnished with fresh parsley.
Notes
Use leftover rotisserie chicken to save time and swap in any vegetables you have on hand.
