- 1 lb chicken breast, diced
- 2 tablespoons Cajun seasoning
- 1 cup rice (white or brown)
- 2 cups chicken broth
- 1 cup heavy cream
- 1/2 cup Parmesan cheese, grated
- Salt and pepper to taste
- 2 tablespoons olive oil
- Chopped parsley for garnish
Instructions
- Heat olive oil in a skillet over medium heat. Add the diced chicken and sprinkle with Cajun seasoning. Cook until the chicken is browned and cooked through.
- In a separate pot, cook the rice in chicken broth according to package instructions.
- Once the chicken is done, reduce heat and add heavy cream and Parmesan cheese to the skillet, stirring until the sauce is creamy.
- Season with salt and pepper to taste.
- Serve the creamy Cajun chicken over a bed of rice. Garnish with chopped parsley.
Notes
For a healthier twist, use cauliflower rice instead of regular rice. You can also substitute chicken with shrimp or sausage.
