Ingredients

  • 1 lb chicken breast, diced
  • 2 tablespoons Cajun seasoning
  • 1 cup rice (white or brown)
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1/2 cup Parmesan cheese, grated
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Chopped parsley for garnish

Instructions

  1. Heat olive oil in a skillet over medium heat. Add the diced chicken and sprinkle with Cajun seasoning. Cook until the chicken is browned and cooked through.
  2. In a separate pot, cook the rice in chicken broth according to package instructions.
  3. Once the chicken is done, reduce heat and add heavy cream and Parmesan cheese to the skillet, stirring until the sauce is creamy.
  4. Season with salt and pepper to taste.
  5. Serve the creamy Cajun chicken over a bed of rice. Garnish with chopped parsley.

Notes

For a healthier twist, use cauliflower rice instead of regular rice. You can also substitute chicken with shrimp or sausage.
