Ingredients
3–4 lbs beef chuck roast
1 large onion, sliced
4 cups beef broth
1 tbsp Worcestershire sauce
2 cloves garlic, minced
1 tsp dried thyme
1 bay leaf
Salt and pepper to taste
6 hoagie rolls
6–8 slices provolone or Swiss cheese
Instructions
1. Season chuck roast with salt and pepper.
2. Place onions and garlic in the crock pot, add roast on top.
3. Pour in beef broth, Worcestershire sauce, thyme, and bay leaf.
4. Cover and cook on low 8–10 hours or high 4–5 hours until tender.
5. Remove roast, shred, and return to juices.
6. Toast hoagie rolls, layer with beef and cheese.
7. Broil until cheese melts and serve with au jus for dipping.
Notes
Provolone is classic, but Swiss or mozzarella also work well.
Toast the bread before assembling to prevent sogginess.
Store leftovers with au jus for up to 4 days.
