Ingredients
1.5 lbs boneless skinless chicken breasts
3 cups fresh or frozen broccoli florets
2 cups shredded cheddar cheese
4 oz cream cheese
1 cup chicken broth
1 tsp minced garlic
Salt and pepper to taste
Instructions
1. Season chicken with salt and pepper, then place in crockpot.
2. Add chicken broth, garlic, and chunks of cream cheese.
3. Top with shredded cheddar cheese.
4. Cover and cook on low for 4–5 hours.
5. Shred chicken, stir in broccoli, and cook an additional 30 minutes.
6. Serve warm over rice, noodles, or mashed potatoes.
Notes
For a thicker sauce, add more cream cheese or reduce broth slightly.
Use frozen broccoli for convenience, but add it near the end to prevent overcooking.
Store leftovers in an airtight container up to 3 days or freeze for up to 2 months.
