Ingredients
2 lbs boneless, skinless chicken breasts or thighs
4 cups chicken broth
1 can cream of chicken soup
1 cup chopped carrots
1 cup chopped celery
1 onion, diced
2 cloves garlic, minced
1 tsp dried thyme
1 tsp salt
½ tsp black pepper
1 cup frozen peas
1 can refrigerated biscuit dough (or homemade dumplings)
Instructions
1. Place chicken, broth, cream of chicken soup, carrots, celery, onion, garlic, and seasonings into crockpot.
2. Cover and cook on low for 6–7 hours or high for 3–4 hours until chicken is tender.
3. Remove chicken, shred with forks, then return it to crockpot.
4. Cut biscuit dough into small pieces and drop into mixture. Stir in peas.
5. Cover and cook on high for 1 hour until dumplings are fluffy and cooked.
Notes
For richer flavor, use chicken thighs. Add extra vegetables like mushrooms, green beans, or corn. Freeze before adding dumplings for best results.
