For the Soup:

  • 1 lb ground beef or ground turkey
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 (28 oz) can crushed tomatoes
  • 1 (15 oz) can tomato sauce
  • 4 cups beef broth
  • 1 teaspoon Italian seasoning
  • 1 teaspoon dried basil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon red pepper flakes (optional, for heat)
  • 8 lasagna noodles, broken into pieces
  • 1 ½ cups water

For the Cheese Topping:

  • 1 cup ricotta cheese
  • ½ cup shredded mozzarella cheese
  • ¼ cup grated Parmesan cheese
  • 1 tablespoon chopped fresh basil (or 1 teaspoon dried)

Instructions

  • In a skillet, cook ground beef (or turkey) over medium heat until browned. Drain excess fat.
  • Add diced onion and garlic, cooking for 2 more minutes until fragrant.
  • Transfer to your crockpot and add crushed tomatoes, tomato sauce, beef broth, Italian seasoning, basil, salt, pepper, and red pepper flakes. Stir well.
  • Cover and cook on LOW for 6-7 hours (or HIGH for 3-4 hours).
  • In the last 30 minutes, add broken lasagna noodles and 1 ½ cups of water. Stir, cover, and let them soften.
  • Meanwhile, mix ricotta, mozzarella, Parmesan, and basil in a small bowl.
  • Serve soup hot with a dollop of cheesy goodness on top!
