For the Soup:
- 1 lb ground beef or ground turkey
- 1 small onion, diced
- 3 cloves garlic, minced
- 1 (28 oz) can crushed tomatoes
- 1 (15 oz) can tomato sauce
- 4 cups beef broth
- 1 teaspoon Italian seasoning
- 1 teaspoon dried basil
- 1 teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon red pepper flakes (optional, for heat)
- 8 lasagna noodles, broken into pieces
- 1 ½ cups water
For the Cheese Topping:
- 1 cup ricotta cheese
- ½ cup shredded mozzarella cheese
- ¼ cup grated Parmesan cheese
- 1 tablespoon chopped fresh basil (or 1 teaspoon dried)
Instructions
- In a skillet, cook ground beef (or turkey) over medium heat until browned. Drain excess fat.
- Add diced onion and garlic, cooking for 2 more minutes until fragrant.
- Transfer to your crockpot and add crushed tomatoes, tomato sauce, beef broth, Italian seasoning, basil, salt, pepper, and red pepper flakes. Stir well.
- Cover and cook on LOW for 6-7 hours (or HIGH for 3-4 hours).
- In the last 30 minutes, add broken lasagna noodles and 1 ½ cups of water. Stir, cover, and let them soften.
- Meanwhile, mix ricotta, mozzarella, Parmesan, and basil in a small bowl.
- Serve soup hot with a dollop of cheesy goodness on top!
