For the Meatloaf:

  • 2 lbs ground beef (80/20 for best flavor)
  • 1 cup breadcrumbs (or crushed crackers)
  • 1/2 cup milk
  • 1 egg
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tbsp Worcestershire sauce
  • 1 tbsp mustard
  • 1/2 tsp paprika
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp dried oregano

For the Glaze:

  • 1/2 cup ketchup
  • 1 tbsp brown sugar
  • 1 tsp mustard
  • 1 tsp apple cider vinegar

Instructions

  1. Preheat & Prep: Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease a loaf pan.
  2. Mix It Up: In a large bowl, combine the ground beef, breadcrumbs, milk, egg, onion, garlic, Worcestershire sauce, mustard, paprika, salt, pepper, and oregano. Mix gently—don’t overwork the meat!
  3. Shape & Bake: Form into a loaf shape on the baking sheet or press into a loaf pan. Bake for 40 minutes.
  4. Make the Glaze: While it bakes, mix ketchup, brown sugar, mustard, and vinegar in a small bowl.
  5. Glaze & Finish Baking: Remove the meatloaf from the oven, spread the glaze on top, and bake for another 15 minutes, or until the internal temp reaches 160°F (71°C).
  6. Rest & Serve: Let it rest for 5-10 minutes before slicing. Enjoy with mashed potatoes or roasted veggies!
