Ingredients
1 lb lean ground turkey
2 medium zucchini, thinly sliced
1 small onion, diced
3 garlic cloves, minced
1 can (14 oz) diced tomatoes (no salt added)
1 cup shredded mozzarella cheese
1/4 cup grated parmesan cheese
1 tbsp olive oil
Salt, pepper, oregano to taste
Instructions
1. Preheat oven to 375°F and grease a medium baking dish.
2. Heat olive oil in a skillet over medium heat. Add onion and garlic, sauté until fragrant.
3. Add ground turkey and cook until browned. Stir in tomatoes, salt, pepper, and oregano.
4. Layer half of the zucchini in the baking dish, then half of the turkey mixture. Add some mozzarella. Repeat layers.
5. Top with parmesan, cover with foil, and bake for 25 minutes. Uncover and bake another 10 minutes.
6. Cool for 5 minutes before serving. Enjoy this hearty, healthy casserole!
Notes
You can salt and drain zucchini slices before layering to avoid excess moisture.

Swap mozzarella for cheddar or feta for extra flavor.
