Instructions

- Heat olive oil in a skillet over medium heat.
- Scoop portions of the sweet potato mixture into the skillet, flattening them slightly.
- Cook for about 4-5 minutes on each side, or until crispy and golden brown.
- Serve hot as a breakfast side or main dish.
Notes
To achieve extra crispy hash browns, remove excess moisture from the grated sweet potatoes using a clean kitchen towel.
