- 4 medium-sized potatoes (small), washed and peeled
- 1/4 cup cornflour
- 1/4 cup rice flour
- 1/4 teaspoon pepper powder
- Salt, to taste
- 1 tablespoon oil (for frying)
- 1 tablespoon garlic, finely chopped
- 1 teaspoon ginger, finely chopped
- 1 long green chili, sliced thin
- 1/2 cup big onion, sliced thin
- 1/2 cup capsicum, sliced thin
- 1 tablespoon spring onions (white part)
- 1 teaspoon soya sauce
- 2 to 3 tablespoons tomato sauce
- 1 teaspoon chilli sauce / schezwan sauce
- 1/2 teaspoon pepper powder
- 1 teaspoon cornflour mixed with 2 tablespoons water
- 1 teaspoon vinegar (optional)
- 1 tablespoon spring onions (green part)
- 2 tablespoons honey
- 2 tablespoons sesame seeds
Instructions
- Wash and peel the potatoes, then cut them into thin wedges.
- In a bowl, mix the cornflour, rice flour, pepper powder, and salt. Add the potato wedges and coat them well.
- Heat oil in a deep frying pan over medium heat. Fry the coated potato wedges until golden and crispy. Remove and drain on paper towels.
- In another pan, heat a little oil. Add garlic and ginger, sauté until fragrant.
- Add the sliced green chili, onion, and capsicum. Stir-fry for a few minutes until the vegetables are slightly tender.
- Mix in the soya sauce, tomato sauce, chilli sauce, and the extra pepper powder. Stir well to combine.
- Add the fried potatoes to the sauce mixture and toss to coat evenly. If the sauce is too thick, add the cornflour mixture and stir until well combined.
- Drizzle vinegar if desired, and add honey and sesame seeds. Toss gently and cook for another minute.
- Garnish with spring onions and serve hot.
Notes
Ensure potatoes are coated well for perfect crispness. Fry in batches for even cooking. Adjust spice levels as needed.
