Ingredients

  • 4 medium-sized potatoes (small), washed and peeled
  • 1/4 cup cornflour
  • 1/4 cup rice flour
  • 1/4 teaspoon pepper powder
  • Salt, to taste
  • 1 tablespoon oil (for frying)
  • 1 tablespoon garlic, finely chopped
  • 1 teaspoon ginger, finely chopped
  • 1 long green chili, sliced thin
  • 1/2 cup big onion, sliced thin
  • 1/2 cup capsicum, sliced thin
  • 1 tablespoon spring onions (white part)
  • 1 teaspoon soya sauce
  • 2 to 3 tablespoons tomato sauce
  • 1 teaspoon chilli sauce / schezwan sauce
  • 1/2 teaspoon pepper powder
  • 1 teaspoon cornflour mixed with 2 tablespoons water
  • 1 teaspoon vinegar (optional)
  • 1 tablespoon spring onions (green part)
  • 2 tablespoons honey
  • 2 tablespoons sesame seeds

Instructions

  1. Wash and peel the potatoes, then cut them into thin wedges.
  2. In a bowl, mix the cornflour, rice flour, pepper powder, and salt. Add the potato wedges and coat them well.
  3. Heat oil in a deep frying pan over medium heat. Fry the coated potato wedges until golden and crispy. Remove and drain on paper towels.
  4. In another pan, heat a little oil. Add garlic and ginger, sauté until fragrant.
  5. Add the sliced green chili, onion, and capsicum. Stir-fry for a few minutes until the vegetables are slightly tender.
  6. Mix in the soya sauce, tomato sauce, chilli sauce, and the extra pepper powder. Stir well to combine.
  7. Add the fried potatoes to the sauce mixture and toss to coat evenly. If the sauce is too thick, add the cornflour mixture and stir until well combined.
  8. Drizzle vinegar if desired, and add honey and sesame seeds. Toss gently and cook for another minute.
  9. Garnish with spring onions and serve hot.

Notes

Ensure potatoes are coated well for perfect crispness. Fry in batches for even cooking. Adjust spice levels as needed.
