2 large sweet potatoes (cut into ¼-inch rounds)

½ tsp black pepper
½ tsp cinnamon (optional)
⅓ cup crumbled feta cheese
2 tbsp honey (plus more for drizzling)
Fresh thyme or rosemary for garnish
Instructions
1. Preheat oven to 400°F and line a baking sheet with parchment paper.
2. Brush both sides of sweet potato slices with olive oil and season with salt, pepper, and cinnamon.
3. Roast for 20–25 minutes, flipping halfway through, until golden and tender.
4. Arrange on a serving platter, top with crumbled feta, drizzle honey, and garnish with thyme.
5. Serve warm and enjoy the blend of sweet and savory flavors.
Notes
For extra crunch, top with toasted walnuts or pecans.
You can roast the sweet potatoes a day ahead and assemble just before serving.
