- 1 pound carrots, peeled and sliced
- 1 pound green beans, trimmed
- 2 tablespoons olive oil
- 1/4 cup honey
- 2 tablespoons lemon juice
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- Salt and pepper to taste
- 1 tablespoon chopped fresh parsley, for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, toss the sliced carrots and green beans with olive oil, honey, lemon juice, cinnamon, nutmeg, salt, and pepper until evenly coated.
- Spread the vegetables in a single layer on a baking sheet.
- Roast for 20-25 minutes, or until the carrots are tender and slightly caramelized, and the green beans are tender-crisp. Stir halfway through cooking.
- Remove from the oven and transfer to a serving dish.
- Garnish with chopped fresh parsley.
- Serve immediately and enjoy!
Notes
Customize this dish by adding other vegetables or substituting maple syrup for honey. For crunch, toss in some chopped nuts before serving.
