- 2 fillets Salmon
- to taste Salt
- to taste Pepper
- 300 g Spinach, thawed and drained
- 1 Onion, sliced
- 2 cloves Garlic, minced
- 200 g Sour Cream
- 150 g Mozzarella
- 1 tbsp Olive Oil
Instructions
- Preheat your oven to 200°C (about 400°F).
- Heat the olive oil in a skillet over medium heat. Add the sliced onion and minced garlic. Sauté until fragrant and the onion becomes translucent.
- Stir in the spinach, cooking it just until heated through. Season with salt and pepper to taste.
- In a baking dish, place the salmon fillets skin-side down. Spread the sautéed spinach mixture evenly over the top of the fillets.
- Spread the sour cream generously over the spinach and salmon.
- Tear or slice the mozzarella and place it atop the sour cream.
- Transfer the baking dish to the preheated oven. Bake for about 20-25 minutes until the salmon flakes easily with a fork and the cheese is bubbly and golden.
Notes
Pairs beautifully with roasted vegetables or a green salad. Leftovers can be used for wraps.
