A quick and delicious baked salmon dish featuring spinach and gooey mozzarella, perfect for busy weeknight dinners.

Ingredients

  • 2 fillets Salmon
  • to taste Salt
  • to taste Pepper
  • 300 g Spinach, thawed and drained
  • 1 Onion, sliced
  • 2 cloves Garlic, minced
  • 200 g Sour Cream
  • 150 g Mozzarella
  • 1 tbsp Olive Oil

Instructions

  1. Preheat your oven to 200°C (about 400°F).
  2. Heat the olive oil in a skillet over medium heat. Add the sliced onion and minced garlic. Sauté until fragrant and the onion becomes translucent.
  3. Stir in the spinach, cooking it just until heated through. Season with salt and pepper to taste.
  4. In a baking dish, place the salmon fillets skin-side down. Spread the sautéed spinach mixture evenly over the top of the fillets.
  5. Spread the sour cream generously over the spinach and salmon.
  6. Tear or slice the mozzarella and place it atop the sour cream.
  7. Transfer the baking dish to the preheated oven. Bake for about 20-25 minutes until the salmon flakes easily with a fork and the cheese is bubbly and golden.

Notes

Pairs beautifully with roasted vegetables or a green salad. Leftovers can be used for wraps.
