Ingredients

  • 4 large russet potatoes
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/2 cup cooked and crumbled bacon
  • 2 green onions, chopped
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Scrub the potatoes clean and poke holes in them with a fork.
  3. Rub the potatoes with olive oil and season with salt.
  4. Bake for about 45 minutes until tender.
  5. Once baked, let the potatoes cool slightly, then slice them in half lengthwise and scoop out some of the flesh.
  6. Place the potato skins back on a baking sheet.
  7. Fill each skin with cheddar cheese, bacon, and green onions.
  8. Bake for an additional 10-15 minutes until the cheese is melted and bubbly.
  9. Serve warm with sour cream on the side.
