- 4 large russet potatoes
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1/2 cup cooked and crumbled bacon
- 2 green onions, chopped
- Salt and pepper to taste
- Olive oil
Instructions
- Preheat your oven to 400°F (200°C).
- Scrub the potatoes clean and poke holes in them with a fork.
- Rub the potatoes with olive oil and season with salt.
- Bake for about 45 minutes until tender.
- Once baked, let the potatoes cool slightly, then slice them in half lengthwise and scoop out some of the flesh.
- Place the potato skins back on a baking sheet.
- Fill each skin with cheddar cheese, bacon, and green onions.
- Bake for an additional 10-15 minutes until the cheese is melted and bubbly.
- Serve warm with sour cream on the side.
