Ingredients
3 large sweet potatoes, peeled and cubed
3 tbsp olive oil
2 tbsp honey
1 tsp ground cinnamon
½ tsp salt
Fresh parsley (optional, garnish)
Instructions
1. Preheat oven to 400°F (200°C) and line a baking sheet.
2. Toss cubed sweet potatoes with olive oil, honey, cinnamon, and salt.
3. Spread evenly on prepared baking sheet.
4. Roast for 25–30 minutes, flipping halfway until caramelized.
5. Garnish with parsley before serving.
Notes
Swap honey with maple syrup for a vegan version.
Add nutmeg or cayenne for extra flavor.
Reheat leftovers in oven to maintain crisp edges.
