- 2 cups rolled oats
- 1 cup almond flour
- 1/3 cup maple syrup
- 1/2 cup coconut oil, melted
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
- 1 cup strawberry jam or fresh strawberries
Instructions
- Preheat your oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper.
- In a large mixing bowl, combine rolled oats, almond flour, and salt.
- In a separate bowl, whisk together the melted coconut oil, maple syrup, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and mix until combined.
- Press half of the mixture evenly into the bottom of the prepared baking pan.
- Spread the strawberry jam or fresh strawberries over the oat base.
- Sprinkle the remaining oat mixture on top of the strawberry layer.
- Bake in the preheated oven for 25-30 minutes, or until golden brown.
- Allow to cool before slicing into bars and enjoy!
Notes
These bars store well in an airtight container for up to five days at room temperature or a week in the refrigerator. They can also be frozen for up to three months.
