- 1 Large egg (room temperature)
- 1 Egg yolk (room temperature)
- 1/3 cup Christmas sprinkles (jimmies)
- 1 1/2 cups All-purpose flour (for cheesecake)
- 1/2 cup Unsalted butter (room temperature)
- 5 TBSP Milk
- 32 oz Cream cheese (room temperature)
- 2/3 cup Regenerative Organic Certified® Cane Sugar from Wholesome
- 3/4 cup Sour cream (room temperature or Greek yogurt)
- 1/2 cup Heavy cream (room temperature)
- 4 Large eggs (room temperature)
- 2/3 Cookie dough balls
- 1 cup White chocolate chips
- 1/3 cup Heavy cream (for ganache)
Instructions
- Preheat the oven and prepare a greased springform pan.
- For the crust, mix flour, baking soda, and salt in a bowl.
- Cream together butter and sugar until light and fluffy in another bowl. Add vanilla, egg, and egg yolk, mixing well.
- Gradually combine the dry ingredients, fold in the sprinkles, and press into the bottom of the pan. Bake until golden.
- Prepare the cookie dough using a similar mixing method as the crust. Roll into small balls and set aside.
- For the cheesecake, blend cream cheese, sugar, sour cream, heavy cream, and vanilla until smooth.
- Add the eggs one at a time, mixing well after each addition. Incorporate cookie dough balls and pour the mixture over the baked crust. Bake until set.
- For the white chocolate ganache, melt white chocolate and heavy cream together until smooth and pour over the cooled cheesecake.
- Serve chilled, sliced into wedges, garnished with extra sprinkles or whipped cream.
Notes
Ensure all ingredients are at room temperature for the best texture and mixing. Check for doneness by looking for a jiggle in the center of the cheesecake.
