Ingredients
4 cups sweet potatoes (peeled and cubed)
2 tbsp olive oil
1 medium onion (chopped)
2 garlic cloves (minced)
4 cups vegetable broth
1 cup coconut milk or cream
½ tsp ground ginger
Salt & pepper to taste
Instructions
1. Heat olive oil and sauté onion and garlic until soft.
2. Add sweet potatoes and ginger; stir well.
3. Pour in broth and simmer until tender.
4. Blend until smooth.
5. Stir in coconut milk and season to taste.
Notes
Roast sweet potatoes for a deeper flavor.
Add cayenne for heat.
Use coconut milk for vegan version.
