Ingredients

  • 1 can coconut milk
  • 4 cups vegetable broth

  • 1 teaspoon turmeric
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. In a pot, sauté the onion, garlic, and ginger until fragrant.
  2. Add the curry powder and turmeric, cooking for another minute.
  3. Stir in the red lentils and vegetable broth.
  4. Bring to a boil, then reduce heat and simmer for about 20 minutes or until lentils are tender.
  5. Stir in the coconut milk and season with salt and pepper.
  6. Serve hot, garnished with fresh cilantro and lime wedges.

Notes
