- 1 tbsp olive oil
- 1 onion, diced
- 2 carrots, chopped
- 3 cloves garlic, minced
- 1 zucchini, diced
- 1 can diced tomatoes
- 4 cups vegetable broth
- 1 can cannellini beans, drained
- 1 tsp dried oregano
- ½ tsp salt
- ½ tsp black pepper
- 2 cups kale, chopped
Instructions
- Heat olive oil in a pot. Sauté onion, carrots, and garlic for 5 minutes.
- Add zucchini, tomatoes, broth, beans, oregano, salt, and pepper. Simmer for 20 minutes.
- Stir in kale and cook for another 5 minutes. Serve hot with crusty bread.
