Ingredients

  • 1 cup dark chocolate chips
  • 1/2 cup unsalted butter
  • 2 eggs
  • 1 cup coconut sugar
  • 1 tsp vanilla extract
  • 1 1/2 cups flour
  • 1/2 cup cocoa powder
  • 1 tsp baking powder
  • 1/2 tsp pink salt
  • 1/2 cup coconut milk
  • 1 tbsp apple cider vinegar
  • 1/2 tsp cinnamon
  • 1/4 tsp cloves

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9-inch round pan.
  2. Melt dark chocolate chips with unsalted butter until smooth, then let cool slightly.
  3. In a bowl, whisk eggs and coconut sugar until well mixed. Add vanilla extract.
  4. Stir the melted chocolate mixture into the egg mix.
  5. In another bowl, mix flour, cocoa powder, baking powder, and pink salt.
  6. Gradually add dry mixture to wet mix, folding gently. Pour in coconut milk and apple cider vinegar, then mix until smooth.
  7. Pour batter into the prepared pan and bake for 28–35 minutes, or until a toothpick comes out clean.
  8. Cool for 15 minutes in the pan before transferring to a rack to cool completely.

Notes

For an extra indulgent treat, top with a chocolate glaze made from dark chocolate and coconut milk.
